The Jamaica Rum Festival is a showcase of the best of Jamaica in the culturally beloved categories of rum, music and FOOD. Leading the charge is CB Foods, with its vast mouthwatering offerings. And, no Jamaican festival is complete without the “Golden Wheels,” serving pure ‘badniss’ in its Bad Dawg Sausages. This is typically based on matching the flavours, weight, and texture of the food and wine to bring about a harmonious experience. “Inside the Bottle”
The revered Joy Spence, Master Blender for the range of Appleton Estate Jamaica Rums, presents “Inside the Bottle”. A journey through the rum making process, “Inside the Bottle” will impart knowledge on the varieties of sugarcane and molasses and how these influence the final flavour profile of a rum. Rum enthusiasts will also be educated on the differences between pot still and column still distillation methods and will taste the distinctions of unaged and aged rums. This tasting exercise will pull the seminar together and put participants’ newly gained knowledge to the test when create their very own rum blends.

You may not be familiar with the name National Rums, but you will surely recognise the brand Monymusk Rum. For years, 90% of what National Rums produces has been sold as bulk rum locally and internationally and the remaining 10% has been bottled under the brand Monymusk Plantation Rum and exported to Canada, Europe and more recently, the USA.
The Monymusk Plantation Rum line comprises White Overproof Rum, Whispering Breeze (Coconut Flavoured Liqueur), Special Gold (2 year old rum), Classic Gold (5 year old rum), and Special Reserve (10 year old rum).
National Rums, though it has roots across the Caribbean, is farmed, cultivated and proudly processed right here in Jamaica. Hampden Estate is one of the oldest rum producers in Jamaica. For years, Hampden Estate sold bulk Jamaican rum to both local and international rum producers. In recent years, since the acquisition of the distillery and estate by the Hussey family in 2009, its anonymity has become a thing of the past.
Founded in 1753 and appreciated globally for its full, intensely flavourful pot stilled rums, it continues to be the heavy pot rum of choice locally and in Europe.

Wray & Nephew White Overproof Rum, dubbed the “Spirit of Jamaica” and a national icon, has remained the premier white rum and a staple in the Jamaican cultural and social scenes. It is a legend in Jamaica where the distinctive yellow, green and black package is a mainstay in almost every home and bar on the island.
Wray Rum is seen as being reflective of the infectiously positive, assertive, proud and strong Jamaican spirit, at 63%ABV, and is known for its inimitable blend, clear liquid and distinctive taste and aroma.
Known as ‘Jamaica’s Best,’ St. James, Hanover, and Westmoreland have adopted this overproof rum as their own, making Charley’s JB the rum of the West. JB with its unique taste, off-white colour and potency was introduced to target the original JB Rum drinkers who consumed what is known as “Cullo Cullo” or “John Crow Batty (JCB).”

Joy Spence, OD, CD
Master Blender, Appleton Estate Jamaica Rum
Appleton Estate’s Master Blender, Joy Spence, has the distinction of being the first woman to hold the position of Master Blender in the spirits industry. In this role, Joy is responsible for ensuring the quality and consistency of existing blends — from distillation through maturation, blending and bottling, as well as developing new blends. Joy’s passion for the art of creating rum-blends was inspired by her predecessor, Owen Tulloch, who was her mentor at the company. Joy joined the Appleton Estate as Chief Chemist in 1981 and was appointed to the position of Master Blender in 1997. Joy celebrated her 35th Anniversary in the spirits industry in 2016 and her 20th Anniversary as Master Blender in 2017.
Joy’s skill and passion for her craft, and her wonderful warm and spirited personality shine through in every bottle of Appleton Estate rum.
Creating rum provides Joy with the perfect balance of art and science. She says that in rum-making, they are so intricately intertwined that it is difficult to pinpoint where the science stops and the art begins.
Senior Blender, Appleton Estate Jamaica Rum
David Morrison is a chemist by profession and has crafted a track record for excellence in his field for almost two decades. He holds a BSc. in Chemistry and Management and a MSc. In Management Information Systems from the University of the West Indies. David joined the J. Wray & Nephew team in 1999 as a Senior Analyst. His progressive experience in Research and Development, Food Safety Management, Quality Assurance, Package and Liquid Development, Production Planning and Production Operations Management resulted in successive promotions. He was appointed Quality and Compliance Director in 2016 with overall responsibility for strategic management of the company’s compliance with international quality and food safety standards. In addition to this substantive role, David’s natural aptitude, technical ability and commendable interpersonal skills have led to him being appointed Senior Blender, successor to the Master Blender, Joy Spence. In this role, David travels the globe to share his passion for the Appleton Estate Jamaica Rum brand.
